At 49 of the 69 masserie on The Puglia Edit, the kitchen is on site. Of all 169 stays, 116 confirm a restaurant and 34 confirm cooking classes, as of October 27, 2026. Twelve say they serve diners who are not staying, among them La Sommità Relais, Masseria Il Frantoio and Masseria Santo Scalone in Ostuni, Masseria Auraterrae near Polignano and La Chiusa delle More on the Gargano.
Eating at a masseria usually means eating where you sleep. As of October 27, 2026, 116 of the 169 stays on The Puglia Edit confirm a restaurant on their official sites, and 49 of the 69 masserie do. The menus lean on the farm, and olive oil, garden vegetables and home-made pasta come up on several sites.
What is a masseria explains the building and its history.
The dining rooms vary too. At Masseria Torricella in Alberobello, the dining room was once a stable, and the niches that held fodder now display old work tools. At La Sommità Relais in Ostuni, the wine cellar is in a cave, an ancient cistern once used for storing olive oil.
The menus the stays publish start from Puglia’s own dishes and produce. Masseria Torricella lists orecchiette, which it describes as traditional local home-made pasta, a cream of broad beans and main courses of lamb, wild boar and rabbit.
Its wine list includes Primitivo, a red, and white wines from Locorotondo. For wine zones, grape varieties and cellars to visit, see the Andiamo in Puglia guide to wine in Puglia (in Italian).
Some kitchens work in a more modern register. The Cielo restaurant at La Sommità Relais has listed an oyster with black pig’s foot and sorrel sauce, ravioli filled with gratinated mussels, and grilled lamb offal with sweet and sour lampascioni. Its dessert, the White City Almond, pairs cupeta with peas and olive oil.
Others mix local roots with outside influence. Ottolire Resort in Locorotondo says its kitchen starts from the deep roots of Apulian cooking and adds touches from other European cuisines, with sustainability, quality and seasonal produce at the core.
The farm often supplies the table. Masseria San Paolo Grande near Ostuni says its organic extra virgin olive oil goes from its own trees to the plate and its organic wine matures in its old vineyards. Masseria Calderisi in Savelletri invites guests to taste its own organic olive oil from the masseria’s harvests, and Masseria Torre Coccaro names oil from olive trees it says are 800 years old.
Summer can move the kitchen outdoors. Villa Cenci Relais Masseria in Cisternino has held a mid-August evening with live cooking by the pool, and orecchiette alla crudaiola, dressed with raw ingredients, was on the menu. For local food festivals outside the masserie, the Andiamo in Puglia guide to sagre, the village food fairs (in Italian) explains how they work and how to choose one.
Only where the property says so. Twelve of the 169 stays on The Puglia Edit state on their sites that they serve diners who are not staying, and of those, five ask for a reservation and one recommends booking.
For every other stay the answer is not confirmed, which is different from no, so ask before you drive out.
| Stay | Area | What the property says |
|---|---|---|
| La Sommità Relais | Ostuni | Non-resident guests can book the restaurant |
| Masseria Il Frantoio | Ostuni | The restaurant is open to outside guests, and in summer moves into the courtyard |
| Masseria Santo Scalone | Ostuni | The restaurant is open by reservation, also to outside guests |
| Masseria Auraterrae | Monopoli and Polignano | The restaurant is open to non-residents, on reservation only |
| Masseria Montelauro | Otranto | The restaurant Fimmine is open to the masseria’s guests and to people who are not staying |
| Palazzo del Corso | Gallipoli | The DolceVita restaurant is also open to external guests |
| Hotel Torre Assunta | Gallipoli | The restaurant La Spiga is open to outside guests, and booking is recommended |
| La Chiusa delle More | Gargano | The restaurant is open to outside guests by reservation |
| Masseria Trulli e Vigne | Valle d’Itria | The restaurant welcomes outside guests for dinner only, from 7:00 to 10:00 PM, and asks you to book at reception |
| Hotel Parco Serrone | Alta Murgia | The restaurant also takes non-guests |
| Antica Masseria Martuccio | Brindisi | La Vecchia Corte, in old vaulted rooms with a fireplace, is also open to outside guests |
| Masseria Acquasale Relais & Restaurant | Taranto | The restaurant is open to outside guests for lunch and dinner |
La Sommità Relais also publishes its hours: lunch from 12:30 to 2:30 PM and dinner from 7:30 to 10:00 PM. Masseria Il Frantoio says its restaurant is open also to guests outside the structure, and that in the summer months it moves into the open air, in the central courtyard.
Policies may change with the season or with private events, so treat the table as a starting point and ask whether an event is booked on your date.
Thirty-four stays on The Puglia Edit confirm cooking classes, and 28 of them also confirm a restaurant. Where the properties describe them, the classes are led by a chef and cover local pasta, bread, focaccia, pizza or seafood.

The table lists stays that confirm both a restaurant and cooking classes. Six more confirm classes without a confirmed restaurant: Masseria Don Luigi, Masseria Malvindi, Masseria Palane, Masseria San Michele, Masseria Vaccaro and Palazzo Daniele.
What the classes teach varies. Leonardo Trulli Resort in Locorotondo lists orecchiette, frise, taralli, focaccia, panzerotti and small biscuits, made with its chef in the restaurant.
Masseria Auraterrae lists orecchiette, focacce, taralli and almond paste. Masseria Calderisi runs a pizza class at the masseria’s ancient stone oven, and Masseria Corsano in Nardò a seafood class that comes before lunch or dinner.
Masseria Il Frantoio teaches the oil instead, with a technical tasting of four organic extra virgin olive oils that takes about 60 minutes.
Your rate decides it, so read what your booking includes. Ottolire Resort says its buffet breakfast is included in the room price and that gluten-free and lactose-free products are available on request. Borgo Canonica in Cisternino describes croissants and homemade tarts.
Half board, breakfast and dinner, comes up at 14 stays in our data. Leonardo Trulli Resort says its half board rate includes a four-course dinner, with wine and drinks excluded. Grand Hotel La Chiusa di Chietri in Alberobello has offered stays in half board and lists cooking lessons and theme dinner evenings among its services.
For other stays, half board is not confirmed in our data. Ask whether dinner is a set menu or à la carte, and whether drinks are included, before you compare two rates.
None is confirmed in our data as of October 27, 2026. The Puglia Edit records a MICHELIN award only from the Guide’s own pages, and none has been verified yet, so the MICHELIN dining collection is not published.
That says nothing about the kitchens themselves. Once the Guide’s pages confirm an award, it will show on the stay page with the date it was checked.
Start with what you want from the table. If dinner every night at the house matters, choose a stay that confirms a restaurant, and check whether it opens every evening. If you want to learn, pick one of the 34 stays with cooking classes and book the class with the room.
If you would rather eat around, look at the 12 stays that welcome outside diners, or base yourself near a town. The Gargano, Monopoli and Polignano, Ostuni and Taranto have eleven stays each that confirm a restaurant, the most of any area, and the Valle d’Itria and Fasano and Savelletri have ten each. The Alta Murgia and Lecce have five each, and Leuca has four, the fewest.
Then check the practical points: the restaurant’s opening days, whether children are welcome at dinner, and whether the menu changes with the season. A stay page shows what the official site states and when we checked it.
Only where the property says so. Twelve of the 169 stays on The Puglia Edit state it on their sites, among them La Sommità Relais, Masseria Il Frantoio, Masseria Santo Scalone, Masseria Auraterrae, Masseria Montelauro, La Chiusa delle More and Masseria Acquasale. Six of the 12 ask for a reservation or recommend one. Ask any other property first.
As of October 27, 2026, 116 of the 169 stays on The Puglia Edit confirm a restaurant on their official sites. Among the 69 masserie, 49 confirm one. A stay without a restaurant listed is not confirmed either way, so check the stay page or ask the property before you plan dinners.
Thirty-four stays on The Puglia Edit confirm cooking classes, and 28 of them also confirm a restaurant. Masseria Auraterrae lists orecchiette, focacce, taralli and almond paste, Masseria Calderisi a pizza class at its stone oven, and Masseria Corsano a seafood class. Book ahead, and ask how each class is organized.
Orecchiette is a traditional pasta of Puglia that appears on several masseria menus. Masseria Torricella describes it as traditional local home-made pasta, and Villa Cenci has served it alla crudaiola, with raw dressings. Several stays teach it in their cooking classes, among them Leonardo Trulli Resort and Masseria Auraterrae.
