Its age depends on the page you read: the masseria dates it to the 16th century, its chapel page puts the main building in the 17th, and the Regione Puglia register calls it a masseria of the 1700s.
A masseria is the fortified farmhouse of the Puglian countryside, and this one served as a salt warehouse before a restoration in white lime.
The family that runs it counts nearly 40 years of hospitality here. The Regione Puglia register for 2026 lists it as a four-star hotel, open from January 1 to December 31.
Scale and food make the argument. You get seven hectares of farmland with centuries-old olive trees, a kitchen that cooks from its own organic garden and oil from its own groves, in the second of five price bands (an estimate, since no official rate was found).
The rooms are furnished in rustic style with antique pieces, inside walls of stone and white lime. Many have a fireplace, and several have their own entrance from outside.
Sizes start at 17 square meters. That is the Classic Double Room, the Acquaro with its canopy bed and the Suite con Camino. The Old Shelter (23 m²) is a converted farm shelter with a private steam room, and the Massaro Suite (45 m²) is the largest, with a jacuzzi and a fireplace.
Suite La Quercia (35 m²) is the room to ask for if privacy decides the trip. It sits on the ground floor of an annex next to the old farmhouse, with a fireplace in the living room, a secret garden, a small heated hydromassage pool and a centuries-old oak outside the door. It sleeps up to five.
Families can look at Suite Alcova (28 m²), with a fireplace and a private terrace, for up to four. In-room comforts include a Nespresso machine, a smart TV, bathrobes and slippers, olive oil toiletries and daily maid service.
The restaurant serves Puglian home cooking in a dining room that the masseria compares to a museum of rural culture. It names orecchiette con cime di rapa (ear-shaped pasta with turnip tops), pot-cooked mashed broad beans and oven-baked rabbit with tomatoes, olives, capers and rosemary.
Vegetables come from the organic farm, where the farmer, Giovanni, and the cooks the masseria calls its mothers-chefs pick what the day’s menu needs. After dinner the house serves its rosoli, sweet Italian liqueurs, by the big fireplaces on winter evenings.
Dinner is by reservation only. It is guaranteed every day from April 1 to October 31, with a four-course menu of the day, and in the low season the restaurant may close for periods or open only now and then. You can book half board or bed and breakfast.
Breakfast is a buffet. In summer Il Pergolato, by the pool, serves light lunches of bruschette, salads, local salami and cheeses, fruit and desserts. There is a cellar of Puglian wines, oil and wine tastings, and an honesty bar.
The masseria stands in seven hectares of cultivated land. The pool, 8 by 15 meters, is ringed by white dry-stone walls, old olive trees and citrus trees, with shaded beds and cabanas. Next to it an outdoor jacuzzi for eight is heated in April, May, September and October.
There is a terrace with canopied day beds facing the countryside, and a family chapel where the village priest says Mass on Sundays in September, a service the neighbors still attend.
The masseria places itself between the Trulli valley and Salento. Ostuni is the town to know: the comune describes its old center as a maze of alleys and lime-washed houses on a hill, with a 15th-century cathedral with a Gothic facade and rose window at the highest point.
On the farm you can join the olive harvest in winter, take a cooking lesson, ride the masseria’s bicycles through the groves, or buy oil and produce at La Bottega, the farm shop.
Couples who want a fireplace suite in a quiet olive grove fit here, and so do families who need a suite for four or five, a playground and a sitter on request. Travelers who come for food will use it well, with cooking lessons, the winter olive harvest and a menu built on the garden.
If a dedicated spa decides the trip, this is the wrong address: here wellness means the pool and the jacuzzi. The masseria’s day-pass page adds massages booked in advance for an extra charge, so ask whether hotel guests can book them.
To sleep on the edge of Ostuni itself, go elsewhere. Vista Ostuni is a 28-room five-star hotel in a former tobacco factory just outside the old town, with a 350 square meter spa.
If you want a larger working farm, Masseria Il Frantoio has a 72-hectare organic estate with an olive mill. Pick Masseria Salinola for the smaller scale and for Suite La Quercia’s private pool.
Fly into Brindisi, the nearer of the two airports. Bari is the alternative if flights suit you better.
Aim for Ostuni, in the Ostuni and the White Coast area. The masseria tells you to set your navigator to via Enrico Berlinguer in Ostuni, then follow the signs for San Michele Salentino.
You want a car. The beaches, Ostuni’s old town and the Trulli valley are separate trips, and the beach shuttle is not running. If you would rather not drive on arrival, the masseria organizes minibus transfers and car rental on request.
By train, the masseria points you to Ostuni station. You still need a ride from the station to the gate, so book the transfer before you travel.
Masseria Salinola has 13 rooms, the figure in the 2026 Regione Puglia register, which also lists it as a four-star hotel. Room types on its website run from the 17 square meter Classic Double Room to the 45 square meter Massaro Suite, which has a jacuzzi and a fireplace. Three suites sleep up to five people.
Masseria Salinola guarantees dinner every day from April 1 to October 31, by reservation only, with a four-course menu of the day. In the low season the restaurant may close for certain periods or open only now and then, so ask before you book a winter stay. The hotel itself stays open all year.
Masseria Salinola stands in olive groves inland from Ostuni, so the sea is a drive away. The masseria lists partner beaches as a paid service, and it marks its beach shuttle bus as temporarily not available. Plan on a car for beach days and check the distance in the At a glance box.
Masseria Salinola accepts a limited number of small pets for a daily surcharge, and asks you to tell reception before you book. Dogs stay on a leash inside the property and are not allowed in the restaurant, and the masseria says barking or poorly trained dogs are not welcome. Owners of larger dogs should ask first.
Masseria Salinola has family suites that sleep four or five, a playground with a swing and a sandbox added in 2025, and baby-sitting on request. The 8 by 15 meter pool opens in season only. Age rules for the restaurant and the pool are not stated, so ask the masseria when you book.
